Herb and Parmesan Crumbed Baked Fish
Try this tasty crumb topping for oven-baked fish. If you don’t have Parmesan cheese in the fridge, use ¼ cup grated cheese.

What you need
1 cup fresh breadcrumbs
¼ cup parsley, chopped
2 tablespoons Parmesan cheese, finely grated
1 teaspoon lemon zest
2 tablespoons oil
Salt and pepper to season
4 fillets firm textured fish fillet e.g., gurnard, terakihi
Method
Pre-heat the oven to 200◦C.
Combine the breadcrumbs, parsley, Parmesan cheese, lemon zest and oil in a bowl. Season with salt and pepper. Mix well.
Place the fish on an oven tray lightly sprayed with oil or lined with baking paper. Press breadcrumb mixture onto the top side of each fish fillet.
Bake in the oven for 15 minutes or until the crumbs are golden and the fish is just cooked through.
Serving Suggestion
Serve with new potatoes and green vegetables. Garnish with lemon wedges.
