Roasted Broccoli and Cauliflower
Roasting vegetables really intensifies the flavour. This is a great way to get your children to enjoy vegetables too.

What you need
1 broccoli head, cut into florets
1 small cauliflower or 1/2 large cauliflower, cut into florets
2 tablespoons oil
1 teaspoon minced garlic or 2 cloves garlic finely chopped
Salt and pepper to taste
Method
Preheat oven to 200 degrees celsius.
In a bowl toss broccoli and cauliflower with oil and garlic.
Line a large roasting dish with baking paper. Lay vegetables in a single layer in the dish.
Season with salt and pepper.
Roast for 10 minutes, stir and roast a further 5 - 10 minutes or until the vegetables are tender and slightly charred.
Hot tip
Add 1/4 grated Parmesan cheese when you toss the vegetables in oil and garlic.
Store broccoli in a plastic bag in the fridge, if you are going to eat it within a couple of days. If you need your broccoli to last longer, sprinkle the head of the broccoli with water, wrap it in paper towels and place it in a sealed ziplock bag in the fridge.
