Asian Slaw with Ginger Peanut Dressing

This crunchy Asian slaw is a delicious way to eat a rainbow of colours! You will find edamame beans with the frozen vegetables.

What you need

  • 1/4 cabbage, finely sliced

  • 2 carrots, peeled and grated

  • 1 red pepper, thinly sliced (if not in season use 3 carrots)

  • 1 cup cooked edamame beans

  • 2 spring onions, finely sliced

  • 1/2 cup chopped peanuts

  • 1/2 cup chopped coriander (optional)

Coleslaw dressing

  • 2 tablespoons oil

  • 1/4 cup rice vinegar OR white vinegar

  • 1 tablespoon soy sauce

  • 1 tablespoon peanut butter

  • 1 tablespoon minced fresh ginger

  • 1 teaspoon minced garlic OR 1 garlic clove, finely chopped


Method

  1. Mix all salad ingredients in a large bowl.

  2. Put all dressing ingredients in a jar and shake well. Make sure the peanut butter is well mixed in.

  3. Pour dressing over salad and toss. Let the slaw sit for at least ten minutes so the vegetables have a chance to soak up the dressing.


Slaw in a hurry

  • If you haven’t got time to prepare all the vegetables, use a bag of pre-prepared coleslaw and grate in a couple of carrots. Add the dressing and ka pai!
