Oven Style Hangi

A modern twist to a traditional cooking method. Using smoked paprika will give your oven hangi a lovely smokey flavour.

20 minutes + 2 hours cooking time

What you need

  • 2 carrots, cut into chunks

  • 4 large, lean lamb or hogget chops OR 8 chicken thigh cutlets (with bones in)

  • 4 potatoes with skin on, cut in half or quarters

  • 1 large kūmara with skin on, cut in half or quarters

  • 1/4 pumpkin, peeled and cut into wedges

  • 1/4 cabbage, cut into wedges

  • 1 cup of water

  • 2 teaspoons smoked paprika

  • Salt and pepper to taste


Method

  1. Preheat oven to 180 degrees.

  2. Using a large roasting dish, place carrots on the bottom, followed by the meat, then potatoes, kūmara and pumpkin. Lay the cabbage on the top.

  3. Pour over water. Sprinkle over smoked paprika and season with salt and pepper.

  4. Cover with a double layer of foil and bake for 2 hours.


Variations

  • You can mix and match your vegetables depending on what you have. You might want to try parsnips, swede or yams, but we think kūmara is a must for your oven hangi!

Did you know?

  • The cupboard is the best place to store kūmara. Think about buying kūmara loose. Buying loose helps you buy what you need and you are more likely to eat what you buy.
