Boil Up

A very easy whānau one-pot meal with plenty of vegetables.

20 minutes + 2 hours cooking time

What you need

  • 1 tablespoon oil

  • 4 lamb shoulder chops, fat trimmed

  • 2 onions, chopped

  • 4 carrots, sliced into 2 cm rounds

  • 1 kūmara with skin on, diced into 2cm cubes

  • 2 potatoes with skin on, diced into 2cm cubes

  • 1 tablespoon vinegar

  • 4 cups watercress or pūhā or finely sliced silver beet


Method

  1. Heat the oil in a large pot. Add meat and brown on each side.

  2. Add onions, carrots, kūmara and potatoes. Stir well.

  3. Add vinegar, cover with cold water and bring to the boil.

  4. Reduce heat and simmer for 2 hours until meat is tender skimming off any fat on the surface.

  5. Add watercress, pūhā or silverbeet just before the end of cooking.

  • This recipe is easily doubled or tripled if you are feeding a crowd.
