Bula Coleslaw
Packed full of vegetables, low in salt and high in fibre, you will love this dish!

What you need
1 onion, thinly sliced
½ cabbage (red, white or a mix of both)
½ bunch watercress, roughly chopped (wash thoroughly)
2 carrots, grated or finely chopped
1 cucumber, halved and finely sliced length ways
2 chillies, finely chopped (leave out if you don’t like heat)
1 bunch of coriander, roughly chopped
1 cup mint leaves, roughly chopped
1 -2 tablespoons white sesame seeds
Coleslaw dressing
1 tablespoon sesame oil
2 tablespoons canola/olive oil
2 freshly squeezed lemons
1 tablespoon honey
1 tablespoon natural Greek yoghurt (or Mayo)
1 tablespoon soy sauce
1 tablespoon finely grated ginger
Pinch of salt and pepper
Method
Mix all salad ingredients in a large bowl.
Put all coleslaw dressing ingredients in a jar and shake well.
Pour dressing over salad and toss.
Variations
Add celery for extra crunch, capsicum to boost your metabolism or pineapple for a sweet twist.
