Bula Coleslaw

Packed full of vegetables, low in salt and high in fibre, you will love this dish!

What you need

  • 1 onion, thinly sliced

  • ½ cabbage (red, white or a mix of both)

  • ½ bunch watercress, roughly chopped (wash thoroughly)

  • 2 carrots, grated or finely chopped

  • 1 cucumber, halved and finely sliced length ways

  • 2 chillies, finely chopped (leave out if you don’t like heat)

  • 1 bunch of coriander, roughly chopped

  • 1 cup mint leaves, roughly chopped

  • 1 -2 tablespoons white sesame seeds

Coleslaw dressing

  • 1 tablespoon sesame oil

  • 2 tablespoons canola/olive oil

  • 2 freshly squeezed lemons

  • 1 tablespoon honey

  • 1 tablespoon natural Greek yoghurt (or Mayo)

  • 1 tablespoon soy sauce

  • 1 tablespoon finely grated ginger

  • Pinch of salt and pepper


Method

  1. Mix all salad ingredients in a large bowl.

  2. Put all coleslaw dressing ingredients in a jar and shake well.

  3. Pour dressing over salad and toss.


Variations

  • Add celery for extra crunch, capsicum to boost your metabolism or pineapple for a sweet twist.
