A tasty, hearty soup, this recipe can be adapted in as many ways as your imagination and taste buds will allow!

What you need

  • 2 teaspoons oil

  • 1 large onion, chopped

  • 2½ cups stock (vegetable or chicken)

  • At least 3 cups of chopped vegetables e.g. carrot, courgette, pumpkin, broccoli

  • Salt and pepper to taste


Method

  • Add oil to a large saucepan, add onion and cook over medium heat until softened and transparent.

  • Add stock and chopped vegetables, simmer for 10 minutes or until vegetables are soft.

  • For a creamy soup, cool a little, then blend using a stick blender or a food processor. Otherwise serve as a chunky soup.


Variations

  • Make your soup into a complete meal by adding protein. Fish, smoked fish, seafood, chopped chicken, tofu, chickpeas, red kidney beans or lentils are good choices.
