Chicken and Chilli Bean Burritos or Tacos
Chicken and chilli beans are a great combination. This is a quick mid-week meal for the whānau to enjoy.

What you need
1 tablespoon oil
1 onion, finely chopped
2 celery stalks, finely chopped
500g chicken thigh fillets (bone removed), chopped into small pieces
2 cans chilli beans
4 burritos/tortillas or tacos
1 red onion, sliced
2 cups iceberg lettuce, shredded
2 tomatoes, diced
Grated cheese to taste
4 tablespoons Greek yoghurt or reduced-fat sour cream
Method
Heat oil in a fry pan. Add onion and celery and stir-fry until softened.
Add diced chicken and cook through.
Add chilli beans, stir through and heat gently.
Warm burritos/tortillas or tacos as per instructions on pack.
Divide chicken mix between burritos or tacos and top with remaining ingredients in the order listed.

Use other salad ingredients such as spring onion, red pepper or halved cherry tomatoes
