Chicken and Chilli Bean Burritos or Tacos

Chicken and chilli beans are a great combination. This is a quick mid-week meal for the whānau to enjoy.

What you need

  • 1 tablespoon oil

  • 1 onion, finely chopped

  • 2 celery stalks, finely chopped

  • 500g chicken thigh fillets (bone removed), chopped into small pieces

  • 2 cans chilli beans

  • 4  burritos/tortillas or tacos

  • 1 red onion, sliced

  • 2 cups iceberg lettuce, shredded

  • 2 tomatoes, diced

  • Grated cheese to taste

  • 4 tablespoons Greek yoghurt or reduced-fat sour cream


Method

  1. Heat oil in a fry pan. Add onion and celery and stir-fry until softened.

  2. Add diced chicken and cook through.

  3. Add chilli beans, stir through and heat gently.

  4. Warm burritos/tortillas or tacos as per instructions on pack.

  5. Divide chicken mix between burritos or tacos and top with remaining ingredients in the order listed.


Variations

  • Boost nutrition by adding sliced avocados

  • Use other salad ingredients such as spring onion, red pepper or halved cherry tomatoes
