Fish Pie

Everyone will love this easy fish pie. You’ll be surprised how good it tastes if you use canned smoked fish. It’s a very economical, nutritious meal.

What you need for Mashed Potato

  • 2 large potatoes, scrubbed and chopped into chunks

  • 2 – 4 tablespoons trim milk

  • 2 teaspoons butter or margarine

  • Salt and pepper to taste

What you need for Fish Filling

  • 1 packet cheese sauce

  • ½ cup milk

  • ½ cup water

  • 185g canned fish, drained and flaked or

  • 2 fish fillets, cooked and flaked

  • ½ cup frozen peas or frozen mixed vegetables

  • 2 hard-boiled eggs, sliced

  • ¼ cup cheese, grated


Method

  1. Boil potato until soft, around 15 – 20 minutes, then mash with milk and butter or margarine.

  2. Preheat oven to 180°C.

  3. Combine cheese sauce mix with cold water and milk in saucepan.

  4. Mix well, bring to the boil while stirring, then turn down heat and simmer until thickened.

  5. Stir in fish, hard-boiled egg and frozen peas. Pour into a small ovenproof dish.

  6. Top with mashed potato and sprinkle with grated cheese.

  7. Bake for around 20 minutes or until bubbling.


Hot tip!

  • Plan meals the day before that use mashed potato and hard boiled eggs and make extra to use in this recipe

  • Floury potatoes work best e.g. Agria, Desiree and Maris Piper
