Marinated Feta

Marinated feta is great to have on hand in the fridge or to give as a gift. Spread on crackers for a delicious snack!

 

Preparation time

15 minutes

 


What you need

  • 1 packet feta

  • zest from 1 lemon

  • 4 x 2cm pieces rosemary

  • Fresh thyme

  • 1 1/2 teaspoons mixed dried herbs

  • Olive oil


Method

  1. Layer feta and herbs in a clean jar.

  2. Pour oil in the jar, enough to completely cover the cheese.

  3. Let it marinate in the fridge for at least 8 hours, for the flavour to build.

  4. It will keep in the fridge for several weeks.


Tips

  • Serve on crackers or toasted wholemeal pita bread.

  • When you have eaten all the feta, use the leftover oil as a dressing on roasted vegetables - yum!

Mix it up

  • Replace the dried mixed herbs with a sprinkle of chilli flakes or some whole garlic cloves.
