Pea Pesto

There’s always a bag of frozen peas in the freezer. Our pea pesto is super easy and will be a firm favourite with friends and whānau.

What you need

  • 1 cup frozen peas

  • 1 teaspoon crushed garlic

  • 1 spring onion, finely sliced

  • 2 tablespoons oil

  • 2 tablespoons lemon juice

  • ¼ cup grated Parmesan cheese

  • 1 teaspoon sweet chilli sauce

  • Salt and pepper, to taste


Method

  1. Blend ingredients together in a food processor or blender. It may be a little stiff to start with, but gets softer as the peas thaw out.


Tips

  • This is delicious as a spread on toast. Top with sliced avocado or tomato.

  • Use minted peas or chopped fresh mint for a lovely flavour.

  • Serve with raw vegetables and toasted pita bread.
