Pea Pesto
There’s always a bag of frozen peas in the freezer. Our pea pesto is super easy and will be a firm favourite with friends and whānau.

What you need
1 cup frozen peas
1 teaspoon crushed garlic
1 spring onion, finely sliced
2 tablespoons oil
2 tablespoons lemon juice
¼ cup grated Parmesan cheese
1 teaspoon sweet chilli sauce
Salt and pepper, to taste
Method
Blend ingredients together in a food processor or blender. It may be a little stiff to start with, but gets softer as the peas thaw out.
Tips
This is delicious as a spread on toast. Top with sliced avocado or tomato.
Use minted peas or chopped fresh mint for a lovely flavour.
Serve with raw vegetables and toasted pita bread.
