Corn Fritters
Always keep a can of creamed corn in your cupboard for this easy lunch or dinner meal. Tamariki will love them in their lunchboxes. These fritters freeze well so even if you live alone make a batch to freeze in portions for a later date.

What you need
1/2 cup self-raising flour (or 1/2 cup flour + 1 teaspoon baking powder)
2 eggs
4 tablespoons milk
1/2 cup grated cheese
1 can creamed corn
1/4 cup finely sliced spring onion, chives or parsley
Salt and pepper to taste
Oil or oil spray for cooking
Method
Mix flour, (baking powder), eggs and milk together to a smooth batter. Add a litle more milk if necessary.
Add cheese, creamed corn, spring onion/herbs and seasonings.
Heat a little oil or oil spray in a heavy-bottomed fry pan. Drop tablespoon-lots of mix into pan.
Cook over medium heat until bubbles appear on the surface, flip over and cook on the other side until golden.
Variations
Use grated courgette (squeeze out the moisture) as the vegetables and feta for the cheese.
Use grated carrot as the vegetables and diced haloumi for the cheese.
