Pea Salad
This super easy and budget-friendly salad will be a hit with everyone. Who doesn’t have a bag of frozen peas in their freezer?

What you need
500g frozen peas
½ small red onion, finely chopped
½ cup cheese, grated
Salt and pepper to taste
Dressing
2 tablespoons mayonnaise
2 tablespoons natural yoghurt
1 tablespoon wholegrain mustard
1 tablespoon mint sauce or mint jelly
Method
Cook peas according to the instructions on the packet.
Drain and run under cold water. Drain again. This stops the cooking process, cools the peas, and keeps them bright green.
Place the peas, onion, and cheese in a large bowl.
In a small jar with a lid, combine the mayonnaise, yoghurt, mustard, and mint sauce.
Shake well to combine the dressing.
Pour the dressing over the salad and fold it through just before serving.
Add salt and pepper to taste.
