Baked Fish - 3 Ways
This recipe offers 3 different marinades for your ika (fish)!

What you need
4 fish fillets, fresh or frozen (use medium to firm textured fish fillets e.g. gurnard, tarakihi or blue cod)
Marinade - choose one of the 3 below
Ginger & Soy Marinade
2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon OR 2 cloves garlic, crushed
1 teaspoon ginger, minced
Zesty Lemon
1 lemon, juice and zest
1/4 cup parsley, finely chopped
Salt and pepper to taste
Pacific Flavours
1/4 teaspoon chilli flakes
2 tablespoons lemon or lime juice
1 tablespoon fish sauce
1 tablespoon brown sugar
Method
Pre-heat the oven to 180◦C.
Place the fish fllets in an ovenproof dish or on a large piece of aluminium foil on a baking tray.
Choose one of the three marinades. Combine all ingredients in a small jug or bowl. Mix well.
Pour over fish.
Cover dish with a lid or fold foil around the fish to make a parcel.
Bake for 10 minutes. Check to see if the fish is cooked. The best way to tell if the fish is cooked is to test with a fork at the thickest point. The fish should flake easily. If the fish needs more time, cook for a further 2 - 3 minutes.
Serving Suggestion
Serve with new or mashed potatoes and green vegetables
