Toasted Muesli

This simple toasted muesli makes a large quantity but you can store it in an airtight container for ages.

 

Preparation time

10 minutes + 1 hour cooking time

 


What you need

  • 1 kg wholegrain oats

  • 1/2 cup almonds, chopped

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/4 cup brown sugar

  • 1 cup boiling water

  • 2 teaspoons cinnamon OR vanilla essence


Method

  • Preheat oven to 150 degrees C and place oats, almonds and seeds in a large roasting dish.

  • Mix boiling water, sugar and cinnamon/vanilla together in a jug or bowl; stir until sugar is dissolved.

  • Add to oat mixture and stir through.

  • Cook for at least 1 hour, stirring every 10 minutes.

  • Turn oven off and leave muesli to cool in oven.

  • Store in an airtight container and serve with fresh or stewed fruit, milk and/or yoghurt.


Tips

  • Use as a sprinkle over fruit and yoghurt/custard for a yummy dessert, or use as a fruit crumble topping

  • Gift it - fill jars and give away as gifts. Don’t forget to include the recipe

Posh it up!

  • Add other seeds or nuts, which are great for heart health!

  • Add dried fruit and/or coconut flakes or thread for added flavour
