Toasted Muesli
This simple toasted muesli makes a large quantity but you can store it in an airtight container for ages.
Preparation time
10 minutes + 1 hour cooking time
What you need
1 kg wholegrain oats
1/2 cup almonds, chopped
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup brown sugar
1 cup boiling water
2 teaspoons cinnamon OR vanilla essence
Method
Preheat oven to 150 degrees C and place oats, almonds and seeds in a large roasting dish.
Mix boiling water, sugar and cinnamon/vanilla together in a jug or bowl; stir until sugar is dissolved.
Add to oat mixture and stir through.
Cook for at least 1 hour, stirring every 10 minutes.
Turn oven off and leave muesli to cool in oven.
Store in an airtight container and serve with fresh or stewed fruit, milk and/or yoghurt.
Tips
Use as a sprinkle over fruit and yoghurt/custard for a yummy dessert, or use as a fruit crumble topping
