Cheese and Herb Omelette
Eggs are budget-friendly and make a great base for any meal.

What you need
2 eggs
1 tablespoon milk
Salt and pepper to taste
1 tablespoon parsley or other fresh herbs
1 teaspoon margarine or butter
1 - 2 tablespoons grated cheese
Method
Beat eggs with milk, salt, pepper and herbs.
Melt butter in fry pan, and when bubbling, pour mixture in.
Cook over moderate heat, lifting mixture at the edge of the pan with a spatula and tilting the pan so uncooked egg runs underneath.
Increase heat to brown the omelette. When mixture is set, sprinkle with grated cheese.
Loosen from pan with spatula and fold in half then turn on to a warm serving plate.
Posh it up!
Jazz it up by adding other ingredients to the mixture after you have poured it into the pan:
sliced mushroom
finely chopped red onion
finely chopped spring onion
diced pepper
tuna or salmon
leftover roast vegetables
