Cheese and Herb Omelette

Eggs are budget-friendly and make a great base for any meal.

What you need

  • 2 eggs

  • 1 tablespoon milk

  • Salt and pepper to taste

  • 1 tablespoon parsley or other fresh herbs

  • 1 teaspoon margarine or butter 

  • 1 - 2 tablespoons grated cheese                                                      


Method

  • Beat eggs with milk, salt, pepper and herbs.

  • Melt butter in fry pan, and when bubbling, pour mixture in.

  • Cook over moderate heat, lifting mixture at the edge of the pan with a spatula and tilting the pan so uncooked egg runs underneath.

  • Increase heat to brown the omelette. When mixture is set, sprinkle with grated cheese.

  • Loosen from pan with spatula and fold in half then turn on to a warm serving plate.


Posh it up!

Jazz it up by adding other ingredients to the mixture after you have poured it into the pan:

  • sliced mushroom

  • finely chopped red onion

  • finely chopped spring onion

  • diced pepper

  • tuna or salmon

  • leftover roast vegetables
