Chocolate Brownie

Who would have thought a brownie using a can of beans could taste so good! It is chocolatey and a little gooey! For a special occasion add 1 cup of frozen berries to the mixture.

 

Preparation time

20 minutes + 30 minutes cooking time

 

Serves

Makes 24 small squares


What you need

  • 1 can black beans, drained and rinsed

  • 3 eggs

  • 1/4 cup sugar

  • pinch salt

  • 2 teaspoons vanilla essence

  • 1/4 cup cocoa powder

  • 1/3 cup oil

  • 1/3 cup shredded coconut

  • 1/3 cup dark chocolate chips

  • 1/3 cup walnuts, roughly chopped


Method

  1. Preheat oven to 180°C.

  2. Line a 20cm x 20cm tin with baking paper.

  3. Add beans, eggs, sugar, salt, vanilla and cocoa to food processor and pulse until smooth.

  4. Slowly pour in oil whilst processing.

  5. Gently stir in coconut, chocolate chips and walnuts.

  6. Pour into the prepared tin and bake for 20 - 30 minutes or until cooked in the centre.

  7. Cool for 5 minutes before turning out and cutting.
