Scrambled Eggs

Eggs are budget-friendly and make a great base for any meal.

What you need

  • 2 eggs

  • 2 tablespoons milk

  • salt and pepper to taste

  • 1 teaspoon margarine or butter                                                       


Method

  1. Whisk the eggs, milk, salt and pepper together in a bowl or jug.

  2. Melt margarine/butter in a small fry pan. Pour in egg mixture.

  3. Cook over low heat, lifting and turning the mixture at intervals with a spoon, keeping it in large soft masses.

  4. Serve immediately.


Serving suggestions

  • On toast - choose bread with > 5g fibre/100g

  • On cooked silver beet, Asian greens or spinach

  • With grilled tomatoes and mushrooms

Posh it up!

You can make scrambled eggs extra special by adding some:

  • chopped parsley

  • fried onion

  • grated cheese

  • sliced mushrooms or

  • leftover cooked vegetables
