Scrambled Eggs
Eggs are budget-friendly and make a great base for any meal.

What you need
2 eggs
2 tablespoons milk
salt and pepper to taste
1 teaspoon margarine or butter
Method
Whisk the eggs, milk, salt and pepper together in a bowl or jug.
Melt margarine/butter in a small fry pan. Pour in egg mixture.
Cook over low heat, lifting and turning the mixture at intervals with a spoon, keeping it in large soft masses.
Serve immediately.
Serving suggestions
On toast - choose bread with > 5g fibre/100g
On cooked silver beet, Asian greens or spinach
With grilled tomatoes and mushrooms

You can make scrambled eggs extra special by adding some:
chopped parsley
fried onion
grated cheese
sliced mushrooms or
leftover cooked vegetables
